Marten Paulsen
As the owner and eponym for Paulsen‘s Landhotel, of course he leads the way. Nevertheless, he doesn’t enjoy being the centre of attention and is more likely to be found working behind the scenes. You’ll often spot him in the kitchen, at the stove, working with our chefs to taste and create hearty regional delicacies. As soon as his duties as boss allow, you’ll find him, his son Jannes and the family dog Emma exploring the beauty of our North Friesian nature.
Inke Wietzke
When you arrive, you’ll find Inke waiting for you with a delicious aromatic ring cake. Otherwise, our hotel professional is out and about whenever she can be. Mostly she takes a bike, as for her there’s nothing finer than cycling through the greenery of our peaceful northern landscapes. So should you be at a loose end, she’s the one to ask for tips: whether you’re after a peaceful ride or more of a challenge to discover the area – ask Inke!
Andre Schirmag
Here is music. André Schirmag sets the tone in our kitchen. The 29-year-old Berliner – trained chef, kitchen master, trainer and passionate amateur musician – has earned his spurs in many high-class restaurants. They include Restaurant ‘Karsten Wulff’ on Sylt, the Austrian ‘Landhotel Schafhuber’, Romantic Hotel ‘Altes Gymnasium’ on Husum and most recently, as Sous Chef, the Hamburg hotel ‘Lindner Hotel am Michel’. He’s been in charge for our Landhotel Paulsen‘s since May 2010. In fact, he’s returned to his roots, as his culinary career started in North Friesland and his wife was born and raised here. In our small, familiar hotel he gives his creativity free reign and serves wonderfully-presented delicacies from the fresh-northern regional kitchen. Dennis Manske
The measure of charm, Dennis will be the one looking after your physical wellbeing in our restaurant. When he’s not proclaiming the beauty of the region’s delicacies or providing a taste of a drop of wine or other, he’s probably talking with his mates, brooding over a tricky chess challenge or on the road with his five-year-old son Sascha.
Trainees Dennis and Torben
Our two trainees Dennis and Torben are extremely dedicated and, whether in the kitchen or serving, are always ready to help in word or deed. You may well spot them with their youthful enthusiasm chasing across the estate – but don’t worry, they’re generally devising some idea or other for our guests. While the upcoming hotelier Dennis spends many a free-time hour as roaming the woods as a scout, Torben is more likely to be found sitting patiently with a fishing rod in hand on the water’s edge waiting for a big catch for his masterpiece as chef.
Melanie Friedrichsen
Melanie is a born and bred North Friesian and the good soul of Paulsen‘s Landhotel. She dedicates herself to making sure you feel at home with us, that your rooms are sparkling clean and that a fresh bed awaits you. And should you discover some fresh local flowers in your room, you can be sure she was out and about again in our gardens.
Irmi Ladwig
Have the tablecloths been properly ironed, are the glasses spotless and the cutlery sparkling? When Irmi has finished, you can be sure the finest details are taken care of in our restaurant. In a homelike ambience, she’ll be delighted to help you choose your food or drinks and can always be called on for a chat. Born in Austria, Irmi has lived here for over 25 years and the only thing she misses are the mountains and a chase down a steep slope.
